I know that you guys pretty much call all desserts puddings, but what do you actually call pudding itself?

The milky based pudding I ate when I visited was a lot like what we call 'egg-custard'.

It's more likely to just be called "chocolate custard" or "chocolate mousse".
The 'in a packet, just-add milk' version is called "Angel Delight".

Then there’s blancmange, which isn’t that common any more but has different flavours.

Can’t recall if it has eggs in it (is that important?), but there’s definitely milk going on there.

It's regional. In the south, a sweet course after the meal is generally called a dessert. There are some desserts called puddings, such as rice pudding.

In the north, the sweet after meal course is called pudding - usually no matter what form it takes.

Unless, you are talking about a starter pudding - Yorkshire Pudding, or a main course pudding - suet pudding, steak and kidney pudding.
