I Made the Most Awesome Texas Chili

So I'm going to write it down so I don't forget what I did.  After reading about 20 different recipes I made up my own.  And it was soooooo good.  I don't like beans in chili, so that's why it's Texas chili and not tradtional.  This makes a nice, mild chili.

So here's the recipe:

1 pound organic beef stew meat
1/2 cup chopped white onion
1/2 cup organic tomato sauce
1 clove garlic (smushed through a garlic press or minced)
4 ounce can of mild diced green chiles
1 tbsp of canola oil
2 cups of water
1 tbsp cocoa powder
1/4 tsp oregano
1/4 tsp paprika
1/4 tsp cumin
1/4 tsp red pepper flakes
1/8 tsp cayenne pepper
1/2 tsp freshly ground sea salt
1/8 tsp freshly ground black pepper
3 tbsp flour

Combine flour, oregano, paprika, cumin, red pepper flakes, cayenne pepper, sea salt, and black pepper in a bowl and mix together.  In one tbsp of canola oil, brown stew meat in a skillet over medium heat.  Add onions and garlic and sautee five minutes.  Add can of green chiles.  Sautee for 2 minutes.  Sprinkle flour/spice combination over meat and mix well.  Add 2 cups of water and stir.  Add tomato sauce and stir some more.  Sprinkle 1 tbsp of cocoa powder around the skillet and mix in.  This will give it a slight sweetness and turn the chili a nice, rich brown.  Bring to a boil then turn down to lowest setting.  Cover and simmer for 2 hours, stirring occassionally.
